Paolo Giancarlo Gabrielloni is known for two things – his flowing brown locks and delicious cocktails.
But this Wednesday night, the Edgewater Dining chief mixologist will only be known for the drinks he creates, with his hair set to disappear.
Paolo’s bosses are shaving his head for the Leukaemia Foundation as part of the U.G.L.Y. Bartender of the Year Competition.

Edgewater’s Peter & Tracey Cianci are donating $5,000 to Paolo’s U.G.L.Y. campaign for the honour of shaving off his famous locks, and they are holding a special party at the venue to celebrate.
The evening will include games of Beat The Bartender, expert talks and a cocktail masterclass from Campari brand ambassador Daniele Pirotta, and a luxury items raffle from supporters including Moët Hennessy Australia, Samuel Smith & Son’s, De Bortoli Wines, Stone & Wood Brewery and many more.
The event will kick off at 5pm on Wednesday 26th July, and all Gold Coasters are invited to attend.
