Here’s an easy rainbow cupcake recipe to celebrate today’s SSM YES vote!

The results are in, and after a long few months, Australia has overwhelmingly voted YES to legalising same-sex marriage.

The Australian Bureau of Statistics revealed 61.6 percent of Aussies voted yes on the marriage equality postal survey compared to just 38.4 percent of people who voted no.

So, what better way to celebrate a day that will go down in the history books than by indulging in a deliciously sweet, fluffy RAINBOW CUPCAKE!

The cupcakes are super easy to make and will put a big smile on your face just by looking at them 😀

Here’s what you will need:

  • 1/2 cup caster sugar
  • 125g butter
  • 2 eggs
  • 1 cup self-raising flour
  • 1.5 teaspoon vanilla essence
  • 3 tablespoons milk
  • 4 bottles of food colouring of your choice – red, blue, yellow, green, pink, purple… the colour choices are endless!

Directions:

Preheat your oven to 180°C and line a 12 cup cupcake tray with patty liners.

In a mixing bowl, add the flour, sugar, butter, eggs, vanilla and milk and beat until combined.

Divide the mixture into seven different bowls

Add half a cup of different food colouring into the bowls, so each bowl has a different colour mixture.

Pour one teaspoon of each different coloured mixture into each patty cup – one on top of the other.

Bake in the oven for 15 minutes!
