Summer Superfood Recipe: Grain-Free Pancakes


EVERYONE’S favorite with a healthy twist.

The breakfast pancake – who doesn’t love pancakes for breakfast? This gluten free & dairy free option is a healthy way to start the day. These energy packed pancakes are high in nutrients and leave you feeling satisfied and energized.

½ cup of coconut flour
½ cup of organic blanched almond meal
3 eggs
1 teaspoon of bi-carb soda
2 cups of almond milk
1 teaspoon of vanilla extract (optional)
½ teaspoon of ground cinnamon (optional)
2 tablespoons of chai seeds
1 cup of blueberries (optional)

Place dry ingredients into glass mixing bowl, add eggs slowly using hand mixer or whisker, and then slowly add milk while mixing. Mix until smooth consistency leave to stand for 5 minutes. Heat a pan to medium heat place a teaspoon of coconut oil to melt then place a spoonful of mixture into pan, once air bubbles appear on top flip pancake and cook until golden brown.

Serve with organic honey/coconut sugar and lemon juice or I cup of berries blended into sauce. Another option is sliced banana or orange segments.
